– 6 kg pork leg
– 1 teaspoon cloves
– 300g orange marmalade
– 5 tablespoons brown sugar
– 1 tablespoon soy sauce
– 1 teaspoon ginger powder
– 1.5 kg large diced potatoes
– 2 tablespoons olive oil
– 2 cloves garlic, minced
– salt
– pepper
Preheat oven to 180 ° C.
Using a knife, remove excess fat from the leg (if applicable). Then add salt and put the meat in a roomy pan. Carve with a knife the top of the leg, so that you get squares of about 1 inch and add the cloves from place to place.
Add hot water into the pan (about 0,8 inch).
In a bowl mix the marmalade, sugar, soy sauce, ginger and a little freshly ground pepper. With a brush spread half of the composition over the meat. Cover the pan with a lid or aluminum foil and bake it for half an hour.
Meanwhile boil the potatoes for 20 minutes in salted water. Then drain them well. In a bowl mix them with olive oil and garlic. For flavor add fresh rosemary, chopped. Season with salt and pepper.
Remove the pan from the oven and smear the meat with remaining marmalade and add the potatoes. Bake for 45 minutes without cover.
