– 4 pieces salmon fillet
– kosher salt
– black pepper, freshly ground
– 3 tablespoons extra virgin olive oil
– 4 garlic cloves, crushed
– 1 small chili pepper, finely chopped
– juice from 4 limes
– 3 tablespoons brown sugar
– 16 oz green beans
– a bunch of coriander, chopped
Season the fish with salt and pepper to taste.
Steam the green beans.
In a non adherent pan cook at medium heat the oil with garlic, chili pepper and a teaspoon of salt. When garlic is soft add the lime juice and sugar. Mix continuously with a spatula. When it starts to boil reduce heat to low. Mix the sauce until it becomes a glaze (about 6-8 minutes). Remove the pan from the heat.
In another pan put a spoonful of olive oil. Add the salmon and roast it on both sides until it is cooked. When ready remove it to a platter.
Put the green beans on a plate, add the coriander and season with salt to taste. For more flavor add a little butter.
Put the fish and pour the lime glaze over it.
Serve the glazed salmon with lime and green beans hot, with a glass of white wine.
