  • 14 oz tomatoes
  • 1 medium cauliflower
  • 8.8 oz beans
  • 3 medium carrots
  • 1 onion
  • 1 green pepper, preferably green
  • 2 cloves of garlic
  • 3 chili peppers
  • 4 tablespoons olive oil
  • 2 tablespoons curry
  • salt
  • pepper
South African Shakalaka

Put the beans in a bowl with water and leave to soak overnight. The next day boil it in salted water for an hour. Drain it and pass it under cold running water. Put it back to boil with the tomatoes.

Chop finely the onion, chili peppers and garlic. Add them in a saucepan with olive oil and curry and cook them for five minutes. Add a little water and then incorporate the sliced carrot, bell pepper cut strips and cauliflower florets. Boil everything for 20 minutes.

Add everything over the baked beans and boil for another 10 minutes. Season with salt and pepper to taste.

Serve the African chakalaka with a rice garnish.
